A Healthy Weight Loss Recipe for Quinoa and Lentil Salad
Quinoa and Lentil Salad
1 cup lentils, canned or dried
2/3 cup quinoa
2 cups water
1 small red onion, diced
3 tbsp fresh cilantro, chopped
4 tbsp fresh mint, chopped
3 tbsp black olives, roughly chopped
Salt, pepper to taste
1. In a large pot of boiling water, cook lentils for about 15-20 minutes, until tender. Drain. Set aside. (Option: use canned lentils instead).
2. Cook quinoa in another pot of boiling water about 20-30 minutes, also set aside.
3. Combine quinoa and lentils in a large bowl. Add in onion, cilantro, mint, olives, salt and pepper.
4. In a small bowl whisk together olive oil, vinegar, lemon juice and agave. Pour over quinoa and lentil mixture and stir.
5. Serve and enjoy.
